Ermine Frosting - Stable

Been researching forever and trying to find a reputable answer. I have a cake due Saturday a (3 days from now), and she wants a fluffy frosting, that will go under fondant.

I need to frost tomorrow - Thursday so I can put Fondant on Friday. If I make the Ermine Frosting today - will it still be good until Saturday and Sunday (for leftovers)?

Normally I would do a SMBC when they want fluffy - but i Know that is only good for about 3-4 days and by Saturday, I would be walking a tight rope.

So sorry you didn't get an answer in time......but I have no ide4a what Ermine frosting is.

Ermine is the cooked flour frosting.  You'll be fine for Saturday - go for it!

Thanks guys. That is what I thought. then I had someone tell me Ermine wasn't strong enough for Fondant.....but I am finding more and more that say it is. Will keep my fingers crossed it works..haha

Yeah after reading this I googled it.  Have often heard/read about flour icing but never heard it called Ermine before :)

Ermine frosting will definitely be stable, but it doesn't crust.  I wouldn't use it under fondant, because it's fluffy, so it's going to be harder to get smooth edges, unless you're just doing a very thin coat.  I use ermine icing often, and despite what I've read, it's definitely sturdy enough to pipe.
