I'm baking a cake for my son's birthday and was wondering how many days in advance I could make it? ill be using buttercream frosting
Laura, if you want to bake it and freeze, you can do it whenever you want. Just be sure to wrap the layers in a couple of thicknesses of plastic wrap, then a final covering of foil or a Ziploc bag. It should be removed from the freezer and left on the counter for a couple of hours before you get ready to decorate.
If you don't want to freeze it, you can make it up to three days prior to serving, especially if you keep it refrigerated.
I keep my cakes in the fridge all the time, habit I think. If they have already been frosted, but not sliced, I don't worry about them. Once they have been sliced, I wrap the sliced portion in plastic wrap and put it into a cake carrier.
