Help please!  I just made a half batch of Bunny's buttercream icing.............only I added a pound of butter instead of a cup.............so twice as much butter!  Should I add more sugar or what??

Thank you!

I would just double the batch completely.  Any icing you don't need/use you can freeze for later.

Yes, probably the best (& only) thing is to increase the other ingredients.  And as Freckles said. any unused can be frozen for the future.  When ready to use it, defrost in the frig overnight, then give it a nice, slow stirring using a wire whisk, stirring in a figure 8 motion.

I always seem to need twice as much as I originally calculated anyway, so it may be a good thing!  Easy fix.
