Refreeze Thawed Cakes?

If I thaw cakes, and the assemble the cake with filling and frosting, can I then freeze the cake again?  I know with meat your not suppose to thaw and freeze again.  Does the same rule apply to cake?

I have frozen cake layers prior to assembling and then if I have any leftovers from the final cake I refreeze individual slices.  When I eat the refrozen slices they taste just as good, if not better than the first time around.  So all that to say yes you can refreeze cakes :)  But if you are concerned about taste you could always make a practice cake to see how things turn out.

i was surprised but i learned in servsafe training you can actually refreeze meat too if it's been kept in the 30 degree range -- if it thaws properly -- you can refreeze it from that point -- 

so yes for cake like freckles said -- no worries

I've refrozen cakes that I don't care about---leftovers, cut slices, family stuff--but I never refreeze finished cakes for clients.  I don't like the texture of refrozen cakes.  It may be my recipe, but I think they are too wet and therefore mushy. 

If I know that a client will be freezing a cake, then I make sure not to freeze the layers before decorating.

Maybenot brings up something we have not mentioned:  Do you bake from scrxatch or mix?  K8 has mentioned amy times that cakes from scratch using real butter don't do well once frig'ed - I am guessing that also applies to fzing.

I’ve been using WASC and chocolate WASC recipes.

I see nothing wrong with refreezing.  But...........do take into consideration that for the most part a cake is considered 'fresh' up to 72 to 84 hrs (3-4 days).  That includes any & all time spent at room temp & in the frig from the time it coumes out of the oven untill it is eaten.  Fzing stops the progression of that time.
