Need Help With Gel Food Coloring

Hi, 

I need to make an ombre buttercream cake in the shades of pastel green but I'm not sure which food coloring to use. I thought of using mint green but not so sure anymore. Does anybody know how to get the colors above? I will be using swiss meringue buttercream.

I’m a big fan of Americolor gels. I would try either mint green or turquoise, depending on how much blue you want in it. Start really really really light, because it will darken up over time.

 LindsayH said...."  Start really really really light, because it will darken up over time."       To a small degree this true.  But.....the less color added the less it will darken.  Starting with an exceptionally light color will not result in much darking.   That being said, I'd start with the 3rd shade on the progression chart you posted.  If any darkening results it will take about 24 hrs and might darkend very silghtly more when exposed to air/use as your hands warm the icing.  This is from experience of working with b'cream for some 30+ yrs :)
