Hi new to this forum, so I have to make a sheet cake for next week, that will serve about 70-80 people. However the request was for a sheet cake covered in fondant. I truly believe that this is impossible but then again nothing is. I have a standard size oven so I know that a full sheet pan will not fit, I have googled many options and found one that makes sense, bake 2 half sheet cakes and cut about an 1' off each side glue them together with BC. Now my question can a cake this size be covered in fondant, or is it better to cover 1/2 and the other half in buttercream. The cake has an edible image that will have to go on top of the fondant and therefore decorated with gold sugar as per the picture that I was provided. Its a very nice cake but the fondant on the entire cake is what is bugging me and has me a bit intimidated. I also don't want to take a chance in filling it causing it to crack, so I remember seeing something online can't remember where but the person made sort of a poke cake but a poke cake with different fillings which I am able to do. Can anyone provide any imput on a cake this large any advice on the what not and what to do with a cake this size, any and all advise is welcome. Thanks a bunch.
I've done it. It's not as hard as you would think. You're right. The full won't fit in a home oven. I used covered plywood for the base so it would be sturdy to help support gluing the two cakes together. To make it more interesting, I filled those sheets, so they were 4" tall as well. The first one I draped, like a normal cake and nearly went nuts. My space is not big enough and that's a lot of fondant rolling. I had a lot more success with paneling, so that's how I do it now. If memory serves, I've only done this for cakes for Boy/Girl Scouts. It worked though - very well. I'll see if I can find a picture.
Welcome to this sweet spot on the internet :) We are glad you joined us. You will learn all kinds of tings if you stick around and read until your bulge :)
As the other poster said, it is doable but not easy. Yes, bake up two 1/2 sheets. No need to trim off that 1" but won't hurt if you want. What size is your 1/2 sheet? An it should be 12x16 (might be 12x18 - then you would want to trim off that 1" so it fits on a 1/2 sheet board. You can double or even triple cardboard cake boards for support if you don't have plywood or something similar. I like the suggestion of paneling it - that way the biggest piece of fondant you need to roll is the 12x16 (or 18) for the top. The piecing (corners & top) will be covered by boarder work.
I have pieced together smaller cakes to form a single large one. The first one was split and filled with buttercream, then frosted in buttercream. The second was filled and frosted with buttercream, then covered in fondant. The guitar was a little larger than life size. The only hard thing about it was finding a spot large enough to roll out the fondant. I used the dining room table.
