I am loving the new Number Cake (aka cream tart) cakes around at the moment. There are so many beautiful pictures of them on Instagram these days and most are decorated with fresh flowers. After some research, I found that most flowers are covered in pesticide and should not touch a cake. I have tried finding a local florist that has pesticide-free flowers but have had no success. Are all these amazing cakes on Instagram really using organic flowers? 

If not, how can I lay a few flowers on such a cake, without poisoning my guests? I dont need to insert the flowers into the cake, just place them on top of the piped cream. I have read about wrapping the base of the flower in cling wrap or foil, but would love to find out if anyone has done this.

You could try placing a sheet of wax paper or plasitc cling wrap with the flowers on top.   If so, I would put a toothpick into a very short stem, then wrap that w/florist tape so I could stick the flower thru the wrap/paper so it won't slide off.

After looking closely to the pic, My thoughts would be Yes, go ahead.  Others might not agree w/me.  If you do I'd suggest to the customer not to serve the whipped cream under where a flower is placed - just to be sure.

You could leave about an inch of stem on the flower and wrap that in floral tape.  By doing this it will help to keep the flower fresher longer, keep any water that was in the stem of the flower from seeping into the frosting as well as keep any pesticides that may be mixed with that water from leaking onto your cake.  Other than that having the petals actually touch the cake is not an issue to worry about.  The only thing that you need to worry about is what may leak out of the cut flower stem.

And lets be honest, the amount of chemicals that could possibly leak from a cut flower and onto the cake would most likely not cause someone to get sick, but rather just cause a not so great taste in that one area...maybe.
