Hi I have had a customer request a chocolate raspberry cake layer... can I just add raspberries to a mud cake recipie I already have or dose anyone have any good ideas for a recipie. please and thank you

i would cook the raspberries down to a paste and sieve to remove seeds -- you could add some sugar if you wanted --

you could get some raspberry jelly/jam/preserves and swirl it into the batter before baking - that would probably work -- or get some sleeve filling

I make a very popular white chocolate and raspberry cake. To my basic batter I add frozen raspberries dusted in a little flour to stop them all sinking to the bottom of the cake. The cake will take longer to cook but the advantage of using frozen fruit is that the berries stay whole and don't go all mushy.

You could also just add raspberry extract to your batter. 1-2 tsp is all it takes.

I use a combo of pureed/sieved fresh raspberries for tartness and a little LorAnn raspberry flavouring - it's very popular xx
