Is there an alternative way to pipe a chrysanthemum with buttercream other than using tip 81?

use a leaf tip or cut a leaf tip using parchment

you can take a rose tip and recreate the tip too -- might work with a smooth sided basket tip

Why don't you woant to use a tip?   There a several sizes besides the 81.   To me that makes a much more real looking one.  Also there is the spider mum made with a grass tip - as K8 is fond on saying easy-peasy :)
