I've used the baking strips a lot, but usually bake at 325 to 340 degrees and it still takes about an hour for them to cook.

There are several things in your ? that makes it hard to understand the problem.  The fact that your cake cracked might have nothing to do with how long you baked it.  Was the layer level when you turned it out of the pan?  The recipe I use bakes up very flat - no center hump - so there is little to no chance of the cake cracking.  Baking strips help the cake bake a little more evenly - and helps keep it from developing such a big center hump.  I bake my cakes at 300 degrees F for about 20 minutes, then turn the oven up to 325 for about the same amount of time.  (That's for any size/shape cake that uses one cake mix).  The larger cakes, of course, take longer but I still bake them at the same temps.  The pan spray won't make much, if any difference.
