How do you keep naked cakes from drying out after assembling  them and before delivery . I'm  thinking that without a thin coat of icing that it would become very dry on the sides.

My bride did not want a thin coat of icing.  I kept the tiers in the freezer until time to deliver and set up the cake on site.  I was hoping that by the time the tiers thawed they would not dry out too much before they were eaten.  I have never been able to find out what the cake was like.  The people I asked who were at the wedding did not eat cake.  In the future I am insisting the tiers be crumb coated.

I made a naked cake last year. I covered each tier in saran wrap overnight and assembled at the venue. I was a little worried because I set up at 11:00am and the wedding wasn’t until 3:00pm, but I talked with a few friends later who attended the wedding and they said the cake was delicious and not dry at all.

One can always coat the tiers with a very thin layer of piping jel.

i would use a glaze or a simple syrup
