I made a new lemon cake recipe today and it looked beautiful coming out of the oven. Perfectly baked. I set the cakes aside to cool and when I come back a while later to check they had shrunk dramatically. What on earth happened!? Never, ever have I had this occur.

I've seen cake layers deflate from being under baked, but I've never seem one shrink????  I haven't a clue!

It is crazy. I mean the cake looked gorgeous coming out. Not over baked or under baked. And then wham!

that's happened to me and I don't know why it does that -- cause I knew I had to re-bake or get a different recipe -- I just never looked it up

I have found it usually  means there is too much liquid in the recipe &/or it is underbaked.
