Hi all!  I’ve forayed into cupcakes and cookies recently but am still a little lost.

what is the best recipe to use for cupcakes?  I would prefer an all or at least half butter based one.

Im looking at sweetex and holy hell is it expensive!  I have seen some bc recipes that use all butter and meringue powder....does the meringue stabilize it??

Meringue powder does little if anything to stableize b'creams.   What makes a b'cream 'crust' or not is the amount of sugar vs. 'fat'.   If you read through the recipe I posted (link above) you will find a version for 'soft' and 'crusting' b'creams.
