Hi all,  Does anyone have experience with refrigerating a fully decorated unicorn cake?  I want to decorate the night before and was not sure the best way to go about it.  The cake will not be fully covered in fondant, Just buttercream.  Is it best to insert the fondant horn and ears first, decorate with buttercream then refrigerate or decorate with buttercream, refrigerate and add the fondant pieces the following day once cake is up to room temp?  Am not sure how the fondant pieces will hold up in the fridge.

Any pointers would be greatly appreciated!!  :-)  I don't have much experience using fondant.

I would ice it, attach ears, but I wait to attach the horn because I can't find a box big enough to accommodate it fully put together. I always wait until delivery to put the horn on so I don't risk it falling and damaging the cake. I have put a butter cream cake that had fondant details in the fridge overnight with no issues. Just don't touch those pieces as the cake is coming back toroom temp and everything will be fine.

I agree with ypierce82 mainly because of the possibility of the horn falling over and ruining your buttercream work.

But, unless you are using a perishable filling, you would probably be alright with just leaving the cake out and covered overnight without issue.  I would still wait to put the horn in until the cake is in its final resting place, but the cake should be just fine sitting out overnight without refrigeration.

Why do you need to refir it??  Just over night??  No, there is no need - unless the filling needs to be kept cold. Just box it up and leave on the counter.

Personally, I am so paranoid, I like to transport my cakes cold.  I would complete everything except the ears and horn and refrigerate until you are ready for delivery.  Once you remove it from the refrigerator, add the ears and horn.  It shouldn't take but a minute to do and you won't have to worry about the effect of refrigeration on the fondant.

Adding your fondant ears/horn and refrigerating is a mistake. The fondant will absorb moisture and upon coming to room temperature will have the probability of  flopping over. My fridge has a dehumidifier built in, so I can store my cakes and not be concerned with moisture. As kakelady posted, buttercream cakes can easily be left on the counter overnight.

I guess I don't know why it would need to be refrigerated. I have made it the night before, left at room temp and it was fine. All buttercream with fondant horn/ears. Also, the horn was fine, and doesn't fall over if wrapped around a dowel or stick or whatever and inserted. I did the mane first, and just left little spaces to insert the ears and horn.

I know that right now where I live, leaving a buttercream cake out at room temp is a no go because it is extremely warm in the house. I have never had an issue putting my cake in the fridge with any fondant pieces attached. I build my horns around a dowel, and made the mistake to transport that way one time, hit a bump and off it came. OP has not responded, so we don't know why she wants to put it in the fridge, but it is ok if she does and ok if she doesn't. I prefer to deliver chilled cakes as well.
