Hey everyone! 

What do you all use for smooth icing on a cake? 

I find American buttercream great for piping but when it comes to smooth spreading it’s too thick? 

Modes anyone have a receipt specific for spreading or any tips??

Wilton Cake Icer Decorating Tip No. 789Wilton makes a BIG tip that is flat on one size w/serrated edge on the other.  It's about 2" wide and sometimes refered to as a quick icer tip.  Just 2 swipes all arond the cake then take an off-set spatula to lightly  smooth it out.  OR you can use a bench scraper.   You don't want to scrape much icing off, just smooth it down.  I'm sure there must be videos on YouTube that show it being done :)

Here's one video that might help you.  It's not using the quick icer tip but another one that is similar and will show you the basic idea.

Gosh, smoothing an American Buttercream cake is so annoying to me, and time consuming, that I learned to use textured & piped sides like the ones above in Kakeladi's photo.  If it needs to be really smooth I put fondant on it and It's smooth.  The best I could do was either to use the foam paint roller or paper sheets to smooth AMBC.  I could never make a living making cakes.

I use a bench scraper and it helps to warm the scraper in hot water (dry before touching the cake, of course).  But don't use me as an example because I cannot get a pretty, sharp finish.
