I am decorating a naked wedding cake with herbs and sugared strawberries and raspberries. I have a couple questions. How do I keep the sugar on the fruit? Should I use wire to tie the herbs together so they stay together and stand up? Also, what would be the best way to prevent the herb flavor from seeping into the cake flavor? To keep the fruit sugered very lightly dampen them before dipping in the sugar. I would not use wire on a cake. You can try tying the herbs w/some ribbon. Dip the stems in melted choco or wax to keep the flavor from seeping into the cake. Or maybe stick the herbs into drinking straws - cut to heigth of the cake.
