Hi everyone,
last week i got my first cake order for someone other than family. was so excited and had no doubt i could do it. Well when i wnet to ice and decorate it just didn’t turn out how i imagined. I’m so scared to drop it off tomorrow that they are going to throw it in my face. And i just feel like giving up on baking all together. When i watch videos on how to ice they ice cakes sooo smooth and when I️ do it with buttercream it’s not! I don’t know what I’m doing wrong! I feel totally defeated from this cake, and i was thinking maybe I’m not the only person this has happened to when making their first cake?
I think your expectations are a bit too high if you thought you were going to get a perfectly smooth cake on your first try. Like most things, practice makes perfect and achieving a perfectly smooth buttercream finish is no exception and is not easy. It is a skill. That would be like attempting a flip on the balance beam and expecting to receive a perfect 10 on your first try.
Don't give up, your next cake will be better and the one after that better still. If you enjoy cake decorating, keep practicing and adding new techniques. Each of us has struggled and worked hard to master basic skills and, personally, I still am learning new tricks every day. The most important thing is to enjoy what you do.
Without seeing your finished work it is hard to really be helpful. As Sandra said, most beginners are as nervous as you are and as hard on themselves. We usually are our own worst critics! Please let us know that you did not get cake smashed in your face LOL :) By the way, if your overall icing is' never smooth' maybe you are using the wrong recipe/consistency. Try adding a bit more 'fat' (be it shortening or butter) to make a smoother, creamier icing. Try this recipe: https://www.cakecentral.com/recipe/22469/2-icing
