Winter Cupcake Flavor

I have been asked to make cupcakes and decorate them as snowmen for a small group (55) I am not a fan of just vanilla or chocolate cake. What flavors would you do that are more exquisite

Coconut cake with finely ground coconut for the snow?

Peppermint cake?

Eggnog cake?

Rum cake?

Not sure if any of those are considered exquisite... but my thoughts for winter...

i think my vanilla wedding cake is the closest to exquisite i've ever made/had -- it's white cake with a grand marnier splash, filled with fresh strawberries and whipped cream in the center then a berry or lemon berry filling in the other two -- the berry filling is cooked down berries and a tart apple to thicken it, littel bit of sugar and a shot of lemon -- the lemon berry has lemon curd/cream added to it -- swiss meringue buttercream iced -- it's killer --

i use an extended recipe with the usual suspects but i use self rising flour

Ooohhhh there are sooooo many flavors one could use but AAtKT's suggestions are good the the holiday.   Other's I'd suggest are lemon; cherry; butter pecan; chopped cranberries in a white or yellow batter; green tomato (fine chopped gr toms & cinnamon in white/yellow batter);
