I made a full rosette cake a few weeks ago, one color though. I had to re-do all of the rosettes. I put it in the refrigerator to firm up the frosting a little. Your frosting may be too soft?

So, what recipe did you use for your frosting? I also think your frosting must be too soft.

Was cake very cold when you piped rosettes on it?

If so, they are likely to fall off.

I've seen several posts on here recently showing the same problem.  I must think it is a combination of working on a cold cake and too much icing - much too heavy.  Maybe people are not touching the tip to the iced cake and lightly, but firmly pushing the icing against the cake to start the rosette, easeing back as you pipe the full rosette.  Just a guess as I have never made a rosette cake :)
