What Do You Clean Your Surfaces With?

Hello all!
I'm new to baking/cake decorating. I often see videos of people rolling out fondant and cookie dough directly on their counter or tabletops. If you do this, what do you clean your surfaces with? I gather it's not exactly safe to clean with Clorox or Lysol before rolling out cookies and fondant onto the surface... or is it? I have no idea.

This below is what one person I read does and this is what I also have done.
I spray two bottles simultaneously of vinegar and hydrogen peroxide which is supposed to kill more germs than nearly anything else, including chlorine bleach. Don't mix them in one container though!
Then I wipe with a wet sponge to rinse and dry with a towel. I love this method because I'm not worried about any residues.
Occasionally when the counter is really dirty or greasy I use some Method unscented spray cleaner, then rinse.
I only cook for home/family so my rules are not super strict at all but I use dishwashing liquid soaped up on the bench, then clean water and then I dry with paper towel, if I am only rolling out something small (flower petals etc) I just use a sheet of baking paper instead of the bench.

I only ever use the vinegar for a good cleaning when using my counter. 99.99% of the time I use a silicone mat for any decorating..fondant, gumpaste etc. Usually for normal everyday cleaning, it's organic dish soap and a norwex antibacterial cloth. Every 4-6 months we use a sealant on the granite.
I use regular kitchen spray, the antibacterial kind, then wipe with a clean cloth and near-boiling water to make sure there isn't anything to transfer to the fondant. Then I let it air dry before rolling.
Hearing people say they use antibacterial stuff always brings a smile to me.......have you ever read the directions on those spray bottles? The spray has to stay wet for no less than 2 minutes to become effective. Have you ever allowed it to stay on the counter/surface that long?
I use a spray bottle with bleach, dish soap and water. Wipe it down with a cloth, then re wipe it with plain water. Then I use a clean dry towel to wipe the counter dry.
