Hi there,this is my first post,(I'm in the U.K.) I have been making sweets for a long time,nothing very tricky really,fudge,toffee,coconut ice,t,tempering chocolate,my granddaughter has asked me to make some designer sweets for her mum for Christmas,namely caramel filled chocolate balls coated in coconut,I have a plan for everything but the coating,so my question is how to get desiccated coconut to stick to the outside of chocolate balls without being sticky?....oh and any tips for making soft centred sweets would be greatly appreciated

Well if Iunderstand your ? right, just coat the balls w/choco, let them sit at room temp for a few minutes,  have the coconut on  a plate or shallow/wide top bowl  and roll the balls in the coconut.

You can get a liquid (called invertase?) that you add to your filling prior to coating in chocolate and it will convert your filling to a liquid/soft centre.

You could also make a type of soft modelling chocolate, roll it into balls, let set and cover in tempered chocolate and it will give you a beautiful soft centred chocolate if you like the taste of modelling chocolate.
