Buttercream Freshness Gone Hard

Ok I have a dilemma, I started making my cake on Friday, got it all frosted with the Buttercream frosting because it was a Saturday Delivery and the the customer calls and says she won't be able to pick it up until Tuesday!!!   I put in the fridge because I wanted it to stay fresh but the Buttercream is getting hard!!! How am I going to be able to keep the cake and buttercream fresh until Tuesday????

I am soooo nervous because it is already getting so hard now the Buttercream is cracking!!!


Can any help me please????

Do you have the cake sealed with cling wrap?  If not, I would definitely try that.  I wrap all of my refrigerated cakes with a couple of layers of cling wrap after the frosting has crusted.

Oh goodness. Last one I had similar to this the lady asked for one date then we I let her know it was ready for pickup she stated she asked for the wrong date. She still picked up the orinigal date we agreed upon, and it was her responsibility to keep it fresh til she needed it. I don't have any advice on keeping it fresh for that long, unless you were to wrap it and freeze it. Good luck!!!

Yes SandraSmily I wrapped it in cling wrap but it still seems like the frosting is "yuk" and hard

Thank you..I wish I would have thought of that one GIGGLEBOX2014...that would have been way easier than this..this is stressing me out

Ya, no way. Lol Caking is enough stress without having to make a last minute date change your problem. Definitely their problem. I wouldn't change the pickup date if I had already started decorating, which I normally do the day before so at that point they are out of luck. Hahaha. I know I've read on here that some have froze the entire decorated cake in similar situations, but I've not been brave enough to freeze a decorated cake yet.

 Sounds like you have no choice but to freeze the whole cake if you have enough freezer space to do so or tell customer that you have already made the cake and she needs to come and get it as the agreed date that she would pick it up. Tell customer to try freezing the cake wrapping it in saran wrap and aluminum foil.  I have never frozen a cake before  so I don't know how that would work either. Otherwise, the cake will be 5 days old by Tuesday and probably not fresh tasting unless it had been frozen. I hope this is not a huge wedding cake!!!! Good luck and I hope the customer comes and picks it up since it was her mistake on date pick up not yours!!!

What recipe did you use for the b'cream?  It is the nature of b'cream to become solid/hard when refrigerated.  It will soften back up when it comes to room tepm.   I really wouldn't stress too much over this :)
