What Is The Crusting Caramel Frosting Everyone Uses.

I have a customer wanting a caramel frosting on a cake and then drizzle caramel over. I've not made caramel frosting or drizzle caramel before. Any help would be helpful. I looking forward to checking out the recipes.

My normal buttercream recipe consists of 2 cups of shortening, water, pinch of salt, flavoring, and 2 pounds of confectioner sugar. Would it be a good idea to use this as a base but do not add the water and flavoring instead add caramel (homemade or Dulce de Leche)?

Yes, you can use that as a base, but adding the caramel will make it extra sweet, so you may want to add more shortening and less powdered sugar. There is a great recipe on here under the recipes tab for a thick caramel. I use it all the time. It thickens once cool. You can use it warm to drizzle, and it will thicken once cool on the cake.
