Completely Sugar free is difficult... Sugar plays such a structural role (especially in icing)...
I can't stomach the taste, aftertaste, and effects of the artificial sweeteners (or for that matter anything the FDA is not considering sugar) that I don't even look into it much... I pretty much stick to honey, cane, beet, agave, and some fruit sugars...
I know that angel food cake has a lower carbohydrate count than most other cakes...
There are other threads on CC about this topic though, maybe one of them has a website or recipe attached...
Have you checked the recipes on here? maybe there is one?
If I may ask, why are you searching for sugar free?
I am also type 2. There really isn't a diabetic cake as the flour does as much damage as sugar. Carbs turn to glucose in the body causing the sugar spikes. The client would know how to work around this with their insulin or meds. Usually, it just means a smaller serving.
