Can I decorate a cake with fondant, ahead of time and leave it in the fridge until its ready to be delivered?

Do you mean the cake is covered/iced in fondant or are just the decoration fondant?  How long will it be in the frig? 

Basically the answer is yes.  I suggest you box the cake then put the box into a plastic bag (or wrap well in plastic wrap).  When you remove it from the frig let it come to room temp as is before you remove the plastic.  That way you should advoid any sweating.

Decorated in buttercream, and have fondant accents. It will be in the fridge for about 4 days.
