Mixing Smbc And American Buttecream

Hi all

After hearing such good things about swiss meringue buttercream I gave  it a try - I liked the smoothness of it but didn't think it was sweet enough and seemed too buttery (and i LOVE butter) and also another taste which I'm assuming was the egg white.

I'm just wondering if anyone has had success mixing is 50/50 Or any other ratio with American frosting or if there are any tips on how to make smbc sweeter, as i did love the texture just felt the taste wasn't quite right (my madeira cakes  aren't especially sweet so can take a good sweet filling)?

Also, will it behave the same under fondant e.g. harden  up when chilled etc?

Interesting thought.   Never tried it.  I had the same reaction to SMBC - didn't like the overwhelming tast of butter so only made it once

sorry for the late reply.  i have not been able to log in for days.  I have mixed SMBC and ABC together many times with no problem.  Either because I have odd amounts to use up, or because I want the sweetness level to be somewhere in between the two.  


Also, to have a less buttery tasting smbc, use butter without added flavorings, (just milk or just cream on the ingredient list) and don't use the expensive european type butters.  Also use lots of vanilla or appropriate flavorings. I think liqueurs such as kahlua, godiva, amaretto, etc add a lot of flavor, really mute the butter taste, and don't taste alcoholic.  HTH

I have tried it, I really dislike ABC but one day I realised that I was short on how much icing I had and made up a batch of ABC, combined it with the SMBC and it was really very nice! The ABC gives the SMBC a pillowy softness even out of the fridge.


You can also combine ganache and SMBC and it is also yummy!

I have tried it, I really dislike ABC but one day I realised that I was short on how much icing I had and made up a batch of ABC, combined it with the SMBC and it was really very nice! The ABC gives the SMBC a pillowy softness even out of the fridge.


You can also combine ganache and SMBC and it is also yummy!

I do it frequently.  It seriously helps ABC and clients seem to love it!
