I am asked to make a cake for a friend sons first birthday. they wanted a carrot cake with dried fruit and nuts. anyone have a recipe I can borrow. also, I am planning on making 3 tiered cake. would it be ok to use carrot cake for tiered cakes.

Never heard of such a recipe - but that doesn't mean it does not exsist :)  As for using it for tiers that will depend on the recipe but most are just fine.

thank you. I found one online which uses dried apricots and walnut, wanted to check and see if I can find a tried and tested recipe.
