Dulce De Leche Questions

I'm making a fudgy chocolate cake with a chocolate buttercream and a dulce de leche filling. I was planning on making a homemade dulce de leche and folding whipped cream into it to cut the sweetness (the group doesn't like sweet foods) as I said before I was planning on making homemade dulce de leche (milk, sugar,baking powder,vanilla) but researching more i found that lots of people buy it from the store or boil sweetened condensed milk. Which way should I make it?

I don't like the idea of boiling an UNopened can......have heard of many accidents.  I'd take the easy way out and buy it ready made :)

I have made it by cooking sweetened, condensed milk in the crock pot...don't remember how many hours, but a long time.  It was good, but Eagle Brand also makes a dulce de leche or caramel for about the same price, so why bother?
