Flavour Combinations

I wanted to make a surprise cake for my dads birthday with a bunch of different flavours (like something you'd see on master chef or zumbos just creations) but I'm uncertain about what flavours. He loves red velvet cake and I was wondering if the following foods/flavours would work well:  custard cream, almonds (he usually prefers them in ice cream or chocolate), macadamia and honey (again useually preferred in icecream), chocolate mousse, and maybe a thin layer of shortbread to give it a crunch factor. These are just some of his preferred foods that I could think of. maybe you guys have a better idea?

Well, to me the custard cream & almonds is great.  Don't know how to make mac w/honey into a filling - maybe mixed into the custard cream?  I'm not too crazy about the shortbread addition but each to their own tastes :)   If it's something he really likes I'd say go for it :)

And report back to us how it goes.........we all like to try different combinations.   I'm rather interested in seeing what others have to say.
