Hi, I wanna make a carousel cake for my daughter 1 years old birthday. I've been reading a lot of tutorial about making it. Some people said make the 3D horse using the royal icing, some said fondant, some said gum paste.

Which one should I use to make it hold on the stick?Carousel Cake Horse

I'd use gumpaste for the horses. It dries faster and firmer than fondant. Super cute cake! Looking forward to seeing your one!

It is a really cute cake you are shooting to copy :) 

I'd use fondant thightened with some Tylose.   In my book gp dries much too fast for my slow work, and dries much too hard for anyone to try to eat .  Yes, as me-me said, ti will dry much faster and firmer than fondant........are you capable of working fast enough?   Or will you get frustrated and give up before finishing?   You could use royal to hold the parts together but gumglue is good too.

I made my carousel cake with a horse mold.  Mold them and give them at least a few days on the stick to dry.

Thank you for all your replies! I will try to use fondant with tylose and see how it goes.

Another question, how do I make perfect stripes cut for the canopy on top? Do I use dummy half sphere and place the fondant and cut it out?

You could do it that way.......I probably would cut out pieces of pink to place over the main/white fondant.    If you have a steady hand just use a pizza cutter to cut them.  I have seen many on tv and in videos do it but it never worked for me :(  My strips would be like ocean waves - lol.   I had to put a ruler or such down to follow and even then sometimes they would not come out straight.
