How Long Ganache Lasts Under Fondant

Hi everyone,
Its my first time i am going to use ganache under fondant. So i have a few questions. I'm hoping can be answered quickly.
1) I'm putting ganache on the cake on sunday and the fondant, the cake will be served the following Saturday. Will it still taste fresh? Its a wedding cake.
2) if yes I'm guessing to use high cocoa content chocolate.
Would it best stored in the fridge or out. Cuz it's covered in fondant wouldn't it be best out.
Or would buttercream last longer?

You could a few things...
1) you could just wait til closer to the date of wedding to ganache and cover with fondant - it might give you piece of mind since its your 1st time.
2) you can ganache and cover with fondant and place in the freezer - i did this for a job where I thought it was due this Monday but I got my dates mixed up, it was actually for the following Monday - I freaked out as you would but I place the cake in a cake box - the tall ones with the clear window and lid -I then covered the whole box with glad wrap - theres no air to be in the box, hence the covering of glad wrap - wrap around til the box is firm with glad wrap - 2 days before the date of delivery, I took it out of freezer to thaw - let it sit outside (must be cool and out of sun) it will thaw with the 1st day.
It worked perfectly for me - it didnt seep, nor bubbled up.

Yeah unfortunately won't be able to make it a few days before as I'll be super busy with wedding planning- its my cousins wedding. . But I'll definitely keep the freezer idea in mind. Did it still taste fresh? Thank you once again xx
YES a cake that has been frozen and well wrapped (as the poster suggested) is still as fresh as the day it was made. One point about the other poster's words........I do NOT suggest putting the cake outside to thaw. It will thaw fine at room temp about 12-24 hrs before delivering - depending on how big/what size the tiers are.
