Tiered Cake For 300 Guests

All,

Does anyone have experience with cakes this size? Honestly I've never gone over ~200.  My oven can accommodate a max 16" round pan. I can fit a 20" half pan into my oven so that's also an option if I make a larger base tier.

Quick questions:

- is it acceptable to do 18 - 15 - 12 - 9 - 6 for 275 servings and provide the rest in a separate sheet cake ?  

- If I do go 20" cake, I don't even have an MDF cake board large enough to accommodate that (max I have is 20"). What do folks do for 20" bottom tiers? 

- are satellite cakes the way to go? 8 inch cakes on the bottom and build up from there? 

Thanks for any guidance on this.

First question- What is your serving size?

I do Wilton Standard wedding cake serving size for all my cakes. That is 1"x 2" x 4"/5". I could get 296 slices with a 16, 14, 12, 10, & 8 if they want to keep the 6" topper. If they don't want to keep the top, then don't do the 6" topper.

Also, I always ask brides if all their guests will eat cake. I can't generally eat wedding cake because I can't have wheat flour. I always tell the couple getting married that I can't eat cake and to discount my piece in their total count. Also, they will have people who won't eat cake. I used to be one of those people as well haha I like ice cream cake the best.

If you use larger serving sizes you can always just make the amount of tiers that your oven can handle and then add sheet cakes that are for serving. They aren't decorated. They are in the back until its time for the venue staff to cut cake and serve.

Thanks, I thought about starting with 16" but that only leaves me 2" between tiers which generally isn't enough. I like at least a 2" gap one the side. I also need to apply flower bouquets to the side so it would look odd with just just 1" .

I have to see if they make MDF cake boards at least 24" wide also.
