So I want to start offering sheet cakes and was thinking $2 per serving with the 2" high pan from Wilton; cut the layer in half and fill it so the cake will be 2 layers and about 2-2.25 inches tall. This would be for a simple icing and border design.
Does this seem right to you? The batter amounts for Wilton are always bang on for me and for an 11x15 that means 11.5 cups of batter for a 2inch high 1 layer cake which I would torte and fill.
Any other ideas or suggestions?
Pricing varies sooo much across the country it's hard to say if that is enough. Personally I think it's very low for a filled cake. I *NEVER* measure by the cupful --- UUUGGG it's soooo messy! And most people do not scrape out the cup well between each cupful so you really are not getting an accurate count! I baked with mixes and over time learned that an 11x15x2 pan uses the amount of batter equal to 2 box mixes. Don't know if you are baking from scratch or mixes - scratch recipes vary all over the place as to how much each yields.
