Hello my friends.

I was reading about emulsifiers in cake batter, definitely I want to try it, I really not sure which emulsifiers work best or where to buy it. I also read that lecithin is a good emulsifier for cake batter, Is this true?

Which brand is good? Or any recommendations?

I've used lecithin in breads but not in cakes.  King Arthur Flour sells a cake enhancer which is mono and diglycerides, it seems to work pretty well and cake stays fresher longer.

look for or develop recipes with buttermilk -- it's a great one
