Hello

I have to make this cake for 30 people (generous portions) and I would like to know what size should I choose for each tier.

You could do 9 and 6". That's 12 extra portions.

definitely agree w/julia.  BUT..........be sure to charge for those 12 extra servings.  Just because they want 'large portions' doesn't mean you should give away your hard work by charging for only the 30 they expect to be there.

I'm surrounded by clients that want larger cakes than they need. For instance, someone sent me a picture of a nice two-tier cake they wanted for 20 people. My solution has been to offer the bottom tier in a size that feeds everyone and then use a cake dummy for the top.  An 8-9" cake will feed 20 people and it would look ridiculous with two tiers. The smallest base I use on a two-tier is 10" , and I'll make the dummy from a 6" . If you need a place to order dummies from, www.guildcraftfoam.com has had the best prices and quality of dummies that I've been able to find. 

I don't sweat the extra servings, I deal with that by charging a minimum for any cake that comes of my kitchen. I live in NY so there's definitely a difference in what you can charge, but all custom cake shops here charge a minimum of $350 for 35 servings and up so I do the same. For this order, 20 guests, I did discount it by $50 because it was a college student surprising their parents.
