I have to make this cake for 30 people (generous portions) and I would like to know what size should I choose for each tier.

I'm surrounded by clients that want larger cakes than they need. For instance, someone sent me a picture of a nice two-tier cake they wanted for 20 people. My solution has been to offer the bottom tier in a size that feeds everyone and then use a cake dummy for the top. An 8-9" cake will feed 20 people and it would look ridiculous with two tiers. The smallest base I use on a two-tier is 10" , and I'll make the dummy from a 6" . If you need a place to order dummies from, www.guildcraftfoam.com has had the best prices and quality of dummies that I've been able to find.
I don't sweat the extra servings, I deal with that by charging a minimum for any cake that comes of my kitchen. I live in NY so there's definitely a difference in what you can charge, but all custom cake shops here charge a minimum of $350 for 35 servings and up so I do the same. For this order, 20 guests, I did discount it by $50 because it was a college student surprising their parents.
