Two factors for you to look at when purchasing non-warping sheet pans: (1) heavier gauge and (2) rolled rims preferably reinforced with wire. These pans are more expensive, but will hold up in the higher heat used during commercial baking. I've purchased many pans from Webstaurant dot com, which has reasonable prices.

i have regualar sheet pans that will warp in higher temps and longer bake times but i have large cookie sheets that are heavy guage that will never wrap
