How long should I mix batter after adding flour and at what speed. I have a butter cake recipe that says mix at medium high speed for 2 mins after adding flour until batter is smooth and fluffy. This is using the creaming method.

I'm confused since i always hear that you shouldn't mix long after adding flour.

I don't have cake flour where I live. Yellow/butter cake is my Nemesis. I cant get a cake that raise and stay high. I usually use 1234 cake recipe. Any help would be highly appreciated. Thanks in advance.

Follow the recipe.  Two minutes is not long.

Thanks for the reply. Anyone else out there mix their batter on medium speed for 2 mins+ after AP flour has been added?
