Hello everyone!

I am entering my first cake decoration competition (yikes!).  My Styrofoam cake dummies are arriving today and I'm anxious to get started on my cake! My entry is due on July 14.  I want to give myself plenty of time to work on it, but I don't want to start too soon and have my fondant dry and crack. Any thoughts or suggestions? Can I cover the cakes in fondant and wrap them in plastic?

Any and all suggestions are appreciated!
