Has anyone ever used a french macaron mix? I saw one on the pastry chef central web site and was wondering it was worth getting? There are no reviews on it, and was hoping to find out if it was any good? or should I just keep making them from scratch?

Im only wondering because I have to make 400 for a wedding.

Interesting, a macaron mix... There are not a lot of ingredients in macarons, so it saves you egg cracking?   You could accomplish the same thing with meringue powder.  How much does the mix cost?  It must be pretty pricey.  Compare it to  the ingredients you will need: eggs, ground almonds, powdered sugar.  Ground almonds here run about $6.50/lb.  Let that be what leads your decision.  Is it cost effective?
