AI did some experiment today! Who wants a "creamsicle" cupcake? So I've used the french vanilla cake mix swap the oil and milk by orange soda, still add the eggs though. The taste is good but not as "orangy" as I expected it to be. Maybe next time I'll follow the "receipe" an omit the eggs as well and add an extra half a cup of soda.

I've topped the cupcakes with an extra-vanilla cooked flour frosting (also an experiment). I've read many comments saying that it taste just like melted ice cream! (could'nt ask for a better match for my creamsicle cupcakes!). Verdict: so yummy! This icing is a little bit on the thin side though.

mb-- and all --

 

i did some of the pumpkin/cake mix muffins and i took some pictures just because it's so easy nowadays --

 

mb, you said how hard it is to combine and it is but i got a big bowl and layered in the powder and spoonfuls of the pumpkin and then just mashed it with a spatula and that was much easier

 

 

 

 

when it was almost combined i added the chocolate chips -- i did not worry about incorporating every jot of cake mix - no need for that --

 

 

see how small they are but still filled each cup full  -- made 12  -- and sprinkled with cinnamon sugar

 

 

they puff straight up like crazy 

 

and man are these good -- and you don't want to eat 40 -- one will do because of all that great pumpkin -- and if you microzap to loosen up the choco chips -- omg so good -- freezes great too --

 

so just some ideas for a stunner snack cake -- and these are sturdy to go in sack lunches & stuff -- nicely portable

 

 

and not to overthink anything -- who me? but i have a can of cherry pie filling that would be amazing on one of these split open served in a bowl warm -- just saying...

AI made pumpkin cupcakes last night with a box of BC French vanilla cake mix, one can of pumpkin and two eggs. I added 2 tsp cinnamon and 1/2 tsp of nutmeg. They were very light and fluffy. My five year old granddaughter describes all cake in two parts: cake bread and cake icing. She said Mimi this cake bread is delicious!
