It will be laying down but carved into the shape of the logo, so I need a fairly sturdy cake and filling.
I'd really like to incorporate some Brazilian flavours into the cake. Do you think a chocolate fudge cake with passionfruit buttercream and covered in dark chocolate ganache would work? Or some other flavour of cake completely? I want to use ganache under fondant, but am open to other flavour ideas.
Any ideas would be greatly appreciated.
