I am making my first number cake so am going to purchase a number 1 cake tin but do you just bake and ice or do you make 2 and sandwich together with jam and butter-cream? Anyone have any tips?

You really don't need to purchase a number pan. http://www.themepartiesnmore.com/cake_number_cakes.htm

Whether you layer it or not depends on how thick/how many servings you want. If you fill it with jam, make a dam of butter cream first to help keep it from oozing out. http://www.wilton.com/cakes/making-cakes/filling-cake-layers.cfm
