AI am considered baking tonight for my Saturday orders. I always bake the day before or day of. If I cool the cakes and wrap them in plastic wrap, should I refrigerate them or leave out at room temp until tomorrow when I decorate?

AI always bake Thursday for Saturday delivery. If the cakes come out at night, I let them cool and cover with a paper towel or waxed paper until filling and frosting on Friday.

I don't know how you have time to decorate if you bake the day of.

 

Baking Thursday for saturday eating is perfectly fine. Leave them at room temp.

I will start as early as the beginning of the week, depending on how large the cake is.  There is way too much to do to wait til Thurs to bake. :))
