Hi I am starting a cake decorating business from home selling sponge cakes, cake pops, cup cakes and ice cream cakes cakes will have either fondant icing or butter icing, edible models etc
How do I figure out the best before date for these items I have heard 3 days but how do shops get longer dates

Your local health regulations may determine what you can sell from home and how it must be stored. You MUST check there first.
Bakeries are able to show a longer shelf life when stabilizers and preservative chemicals like potassium sorbate have been added. These commercial additives are regulated in most countries. Their use MUST be shown on ingredient labels.
