Has anyone made a Poke Cake with gelatin for a stacked cake? I have made them long time ago in a 13x9 pan that doesn't get put on a cake board. Just curious if anyone had done it with a cake that they frost and/or stack.

A friend of mine is having a strawberry themed party and I thought it would be cute to put strawberry gelatin over a white cake as a Poke Cake.

Thoughts???????????

I don't think I would even try it, too much moisture to stack and decorate. The poke material is saturating the cake and it will be soaked into the cake and you could ice and decorate that layer but, I would be afraid that the strawberry would seep out. How about cutting some strawberries and cooking them with cornstarch and sugar to make a filling that way? You can google strawberry filling and get some good recipes. HTH

I think that's a cake best left in the pan.
