I heard the cake flour is better than all purpose and self rising. Its ok to do all the cakes with cake flour even though the recipe says self rising or all purpose? Whats the different between the three of them? Thank you!! icon_smile.gif

Self-rising flour is all-purpose flour with salt and baking powder added to it. If the recipe calls for self-rising flour, it probably will not list salt or any leavening agent.

All purpose flour is just that--ordinary flour.

Cake flour has less protein. See http://bakingbites.com/2010/11/what-is-cake-flour/

Ive tried them all but in my opinion Cake Flour is by far the BEST! More expensive but has the best results. When a recipe calls for regular flour you can use cake flour but add two extra TBSP. SO 1 cup of flour=1 cup +2 TBSP of cake flour.
