I hope the cupcakes will be pre-packaged... Is it a refrigerated case?
Do shelf life testing. Bring a few of your cupcakes to the site and let them sit all day. Sample them at night. That will let you know how long they will keep.
I was going to ask if the auto-inspection station has a food handler's license, but perhaps if all the cupcakes are pre-wrapped it would be like selling food in a vending machine. Maybe you should call your HD.
