Hi. i hope someone could help. have tried out a new recipe for a cupcake today which includes crushed and broken biscuits, the biscuits have gone soggy. anybody know of how i can keep the biscuits crunchy. thanks in advance x thumbs_up.gif

The biscuits absorbed moisture from your other ingredients. It's called moisture migration. You can try using other biscuits but it will most likely continue. You can try putting biscuits on the bottom then covering with jam to block the moisture; but (sorry) I don't think that would work, either. If you really want to use the biscuits as part of the recipe, I suggest crumbling them on top of the icing.
