The Mat, Using Modeling Chocolate & Airbrushing It?

Hi guys, so i have a cake coming up that will be an odd shape (to look liked a baked ham), Im thinking to get the detail i want, Modeling Chocolate might work best.

Have you ever covered a cake with modeling chocolate using Sweet Wise's the MAT?
Any tips or tricks?

Secondly Can you airbrush the modeling chocolate?

Water based airbrush colours will bead on chocolate. I assume the principle is the same for modelling chocolate. You need to use coloured cocoa butter but that is a difficult process (having to keep it at the right temperature). I haven't tried airbrushing using oil based colours so I'm not sure if that would work.
