Need Advice For Gluten Free & Vegan Cake & Frosting

I need to make a cake and cupcakes that is both Gluten Free & Vegan and could use some recipes/ideas. I'm usually a scratch baker, but am prepared to use a mix if I have to for better results.
I haven't been able to source Bettercreme near me, and usually fill with Buttercream, Ganache or preserves, so ideas for fillings please? My friend has requested some kind of chocolate/vanilla combination.
Can you make Vegan Ganache?

For vegan frosting we use a base of Earth Balance vegan buttery sticks (available in Whole Foods) and Sweetex Z shortening (but Crisco should work). Both are gluten-free as well. You can make vegan ganache by melting vegan chocolate chips (again available at most Whole Foods locations).
For vegan/GF cakes we typically use either tofu or ground flaxseed as a base. Cherrybrook Kitchens makes a vegan/GF cake mix as well.
